Apple Bacon Crumble aka “The Valentina Special”

So, my best friend, Valentina, calls me up one Friday night.  She’s all excited because she’d just come up with a genius idea for my blog.  It involved bacon.  She had my attention.  Val’s idea was for an apple pie that had a candied bacon lattice top.  It sounded crazy (mostly because Valentina is a little nuts — that’s part of her charm); but she was definitely onto something.  After some experimenting, I came up with this recipe.  It’s sweet with a subtle saltiness…and it’s named after Val because she told me that if I used her idea I had to mention her name in the blog post.

Ingredients:

  • 3 1/2 cups all purpose flour
  • 2 1/4 cups brown sugar
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 cup cold butter, cut into cubes
  • 1 egg, lightly beaten
  • 8 cups sliced apples (about 9 or 10 large ones — I like to use Cortland apples)
  • 2 tbsp lemon juice
  • 2 tsp ground cinnamon
  • 2 tsp vanilla extract
  • 1/2 tsp ground nutmeg
  • 1/2 cup chopped pecans
  • 1/2 cup cooked crispy bacon, finely chopped
 Method:
  1. Preheat oven to 375F. Grease a 9×13 inch baking pan.
  2. In a large bowl, whisk together 3 cups of flour, 1 cup of brown sugar, baking powder and 1/2 tsp salt. Cut in the cold butter with a pastry cutter or your fingers. Add the egg.
  3. Press half the dough into the prepared baking pan and refrigerate.
  4. Add 1/4 cup brown sugar, 1 tsp cinnamon, pecans and bacon to the remaining half of the dough. Place in fridge while you make filling.
  5. In a large bowl, combine the sliced apples and lemon juice. Mix in 1/2 cup flour, 1 cup brown sugar, 1/2 tsp salt, 1 tsp cinnamon, nutmeg and vanilla. Stir until all the apples are coated.
  6. Spread apple mixture evenly over the chilled crust. Sprinkle the crumb topping evenly over the apples.
  7. Bake for 50-60 minutes, or until top is golden brown.
  8. Cool completely before slicing.

    I could definitely see this making sense. Also, interesting that you used Cortland. Every recipe I see always calls for granny smith.

      I love Cortland because they’re not too sweet, hold their shape and don’t brown when they’re cut. It’s my favourite cooking/baking apple.
