Strawberry Rhubarb Bars

These easy to make bars are bursting with fresh strawberries and rhubarb. It’s the perfect summer treat!

Ingredients:

  • 2 cups rolled oats (not instant)
  • 1 1/2 cups all-purpose flour
  • 2/3 cup brown sugar
  • 1/2 tsp ground ginger
  • 1 tsp salt
  • 2/3 cup unsalted butter, cubed and slightly softened.
  • 2 cups fresh strawberries, quartered
  • 1 cup chopped rhubarb
  • 2 tsp cornstarch
  • 1 tsp vanilla extract
  • 1/3 cup sugar

For the glaze:

  • 3/4 cup powdered sugar
  • 1-2 tbsp milk

Method:

  1. Preheat oven to 375F and grease a 9×13 inch baking pan.
  2. In a bowl, combine the oats, flour, brown sugar, ginger and salt.
  3. Use a pastry cutter—or your fingers— to mix in the butter. Continue mixing until the butter is fully incorporated and the mixture forms large clumps. Press a little over half of the mixture into the bottom of your prepared pan. Set the remaining mixture aside to use as the topping.
  4. In a separate bowl, stir together the strawberries, rhubarb, cornstarch, vanilla and sugar. Spoon the fruit mixture evenly over the base.
  5. Next, sprinkle the topping over the fruit. Bake for 35-40 minutes. Cool completely before drizzling with glaze.
  6. Once the bars have cooled completely, make the glaze by combining the powdered sugar and the milk in a small bowl until smooth. Drizzle the icing over the bars.
