Classic marble loaf cake brings together the best of both worlds: a rich chocolate ribbon running through a soft, moist vanilla base.
This recipe gives you that classic bakery-style texture with an easy method that never fails.
Ingredients:
- 1/4 cup butter, melted
- 1/4 cup of vegetable oil
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup sugar
- 4 eggs, at room temperature
- 1 tsp vanilla extract
- 2/3 cup buttermilk or Greek yogurt
- 1/3 cup cocoa powder
- 1/3 cup hot brewed coffee
Method:
- Preheat oven to 350F and grease a 9×5 inch loaf pan.
- In a bowl, whisk together the flour, baking powder and salt. Set aside.
- Using an electric mixer fitted with the paddle attachment, beat the butter, oil and sugar until light and fluffy.
- Add the eggs, one at a time, until fully incorporated. Add vanilla.
- Next, add in the flour mixture in two batches alternating with the buttermilk. Mix until fully combined. Set aside half the batter.
- In a separate bowl, whisk together the cocoa powder and hot coffee until smooth.
- Add half the batter to the chocolate mixture and stir until fully incorporated.
- Spoon the batters into the prepared pan, alternating spoonfuls of vanilla and chocolate.
- Use an offset spatula or a knife to swirl the batters together.
- Bake for 45-50 minutes, until a toothpick inserted in center of the cake comes out clean. Cool on a wire rack.
