There’s no mixer needed to make this delicious Apple Loaf Cake. Grated apples and buttermilk create a moist and rich sponge that’s flavoured with a hint of warm cinnamon. This recipe yields two loaves which means you can eat one now and freeze one for later (or eat both now—no judgement!)

Ingredients:
- 4 cups all -purpose flour
- 1 1/2 cups brown sugar
- 2 tbsp baking powder
- 1 tbsp cinnamon
- 1 tsp salt
- 2 eggs, at room temperature
- 2 cups buttermilk (or plain yoghurt- fat free is fine)
- 1/2 cup vegetable oil
- 1 tsp vanilla extract
- 4 large apples, peeled and grated
For the topping:
- 1/2 cup white sugar
- 1 tsp cinnamon
Method:
- Preheat oven to 350F and grease two 8×4 inch loaf pans.
- In a bowl, mix together the flour, brown sugar, baking powder, cinnamon and salt. Set aside.
- In a separate bowl, whisk together the eggs, buttermilk, oil and vanilla.
- Add the wet ingredients to the dry and mix until just combined.
- Next, stir in the grated apples.
- Spoon the batter into the prepared loaf pans.
- In a small bowl, mix together the topping ingredients. Sprinkle evenly over both loaves.
- Bake for 45-55 minutes, or until a toothpick inserted in centre of loaf comes out clean.
* Yield: Two 8×4 inch loaves
