This easy-to-make cake tastes just like a maple-glazed doughnut in cake form. It’s a one-bowl treat that’s perfect for the spring sugaring off season!
Ingredients:
- 1/2 cup butter, melted and cooled
- 1/2 cup vegetable oil (I use olive oil)
- 1/2 cup pure maple syrup
- 1/2 cup brown sugar
- 3 eggs, at room temperature
- 1 tsp vanilla extract
- 1/2 tsp maple extract
- 1/2 cup buttermilk or Greek yogurt
- 1/2 tsp salt
- 2 tsp baking powder
- 2 cups flour
For the glaze:
- 2/3 cup powdered sugar
- 2 tsp maple syrup
- 1-2 tsp milk
- Pinch of flaked sea salt (optional)
Method:
- Preheat oven to 350F and grease a 9×5 inch loaf pan.
- In a bowl, whisk together the butter, oil, maple syrup, sugar, eggs, extracts and buttermilk.
- Next, stir in the salt, baking powder and flour. Mix until fully incorporated.
- Pour batter into prepared pan and bake for 55-60 minutes, until a toothpick inserted in center of cake comes out clean. Cool on a wire rack before glazing.
- For the glaze: stir all glaze ingredients together until smooth. If you’d like a thinner glaze, add a bit more milk. For a thicker glaze, add a little more sugar. Pour glaze over completely cooled cake.
