Maple Loaf Cake

This easy-to-make cake tastes just like a maple-glazed doughnut in cake form. It’s a one-bowl treat that’s perfect for the spring sugaring off season!

Ingredients:

  • 1/2 cup butter, melted and cooled
  • 1/2 cup vegetable oil (I use olive oil)
  • 1/2 cup pure maple syrup
  • 1/2 cup brown sugar
  • 3 eggs, at room temperature
  • 1 tsp vanilla extract
  • 1/2 tsp maple extract
  • 1/2 cup buttermilk or Greek yogurt
  • 1/2 tsp salt
  • 2 tsp baking powder
  • 2 cups flour

For the glaze:

  • 2/3 cup powdered sugar
  • 2 tsp maple syrup
  • 1-2 tsp milk
  • Pinch of flaked sea salt (optional)

Method:

  1. Preheat oven to 350F and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together the butter, oil, maple syrup, sugar, eggs, extracts and buttermilk.
  3. Next, stir in the salt, baking powder and flour. Mix until fully incorporated.
  4. Pour batter into prepared pan and bake for 55-60 minutes, until a toothpick inserted in center of cake comes out clean. Cool on a wire rack before glazing.
  5. For the glaze: stir all glaze ingredients together until smooth. If you’d like a thinner glaze, add a bit more milk. For a thicker glaze, add a little more sugar. Pour glaze over completely cooled cake.
