This orange loaf is one of those simple, no-fail bakes I come back to all the time. It’s packed with real orange flavour and finished with an easy glaze that makes it feel a little fancy without any extra work.
Perfect with coffee, easy enough for any day of the week and it always turns out!
Ingredients
- 1 1/2 cups all purpose flour
- 2 1/2 tsp baking powder
- 1 tsp salt
- 1/2 cup sugar
- 2 tbsp orange zest
- 2 eggs, at room temperature
- 3/4 cup orange juice
- 1/2 cup vegetable oil (I use olive oil)
- 1 tsp vanilla extract
Glaze:
- 3/4 cup powdered sugar
- 1-2 tbsp orange juice
Method
- Preheat oven to 350F and grease an 8×4 inch loaf pan.
- In a bowl, stir together the flour, baking powder and salt. Set aside.
- In a separate bowl, mix together the sugar and orange zest until fragrant and fully combined.
- Next, whisk in the eggs and mix well.
- Add in the orange juice and oil. Whisk until fully incorporated. Mix in the vanilla extract.
- Next, add the flour mixture and stir until just combined.
- Spoon the batter into the prepared pan and bake for 35-40 minutes, until a toothpick inserted in the centre of the cake comes out clean. Cool completely on a wire rack.
- For the glaze: in a small bowl, whisk together the powdered sugar and orange juice until smooth. If it’s too runny, add a little more sugar. If it’s too thick, add a touch more juice. Drizzle glaze over completely cooled cake.
Yield: One 8×4 inch loaf
