Easy Orange Loaf Cake

This orange loaf is one of those simple, no-fail bakes I come back to all the time. It’s packed with real orange flavour and finished with an easy glaze that makes it feel a little fancy without any extra work.

Perfect with coffee, easy enough for any day of the week and it always turns out!

Ingredients

  • 1 1/2 cups all purpose flour
  • 2 1/2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup sugar
  • 2 tbsp orange zest
  • 2 eggs, at room temperature
  • 3/4 cup orange juice
  • 1/2 cup vegetable oil (I use olive oil)
  • 1 tsp vanilla extract

Glaze:

  • 3/4 cup powdered sugar
  • 1-2 tbsp orange juice

Method

  1. Preheat oven to 350F and grease an 8×4 inch loaf pan.
  2. In a bowl, stir together the flour, baking powder and salt. Set aside.
  3. In a separate bowl, mix together the sugar and orange zest until fragrant and fully combined.
  4. Next, whisk in the eggs and mix well.
  5. Add in the orange juice and oil. Whisk until fully incorporated. Mix in the vanilla extract.
  6. Next, add the flour mixture and stir until just combined.
  7. Spoon the batter into the prepared pan and bake for 35-40 minutes, until a toothpick inserted in the centre of the cake comes out clean. Cool completely on a wire rack.
  8. For the glaze: in a small bowl, whisk together the powdered sugar and orange juice until smooth. If it’s too runny, add a little more sugar. If it’s too thick, add a touch more juice. Drizzle glaze over completely cooled cake.

Yield: One 8×4 inch loaf
