If you like cakes with texture, this Apple Bundt cake is for you. It’s filled with crunchy walnuts, shredded coconut and sweet grated apples. The perfect autumn treat!
Ingredients:
- 3 cups flour
- 1 tsp baking soda
- 1 tbsp cinnamon
- 1 tsp salt
- 2 cups white sugar
- 3 eggs, at room temperature
- 1/2 cup vegetable oil
- 1/2 cup buttermilk or plain yoghurt (fat free is fine)
- 1 tsp vanilla extract
- 1/4 cup fresh squeezed orange juice (from one orange)
- 2 cups peeled, grated apples
- 1 cup chopped walnuts
- 1 cup shredded coconut
For the glaze:
- 1 cup powdered sugar
- 2-3 tbsp milk
Method:
- Preheat the oven to 325F.
Grease and flour a standard-sized Bundt or ring cake pan. - In a bowl, whisk together the flour, baking soda, salt and cinnamon.
- In the bowl of an an electric mixer fitted with the paddle attachment, or using a hand held mixer, beat the sugar, eggs, oil, yoghurt,vanilla and orange juice until combined.
- Turn mixer to low, and add dry ingredients. Mix until fully incorporated. Next, mix in the walnuts, coconut and grated apples.
- Pour into prepared pan. Bake for 60-70 minutes, until a toothpick inserted in center of the cake comes out clean. Cool cake completely on a wire rack before glazing.
- For the glaze: in a bowl, mix together the powdered sugar until smooth. If mixture is too thin, add a bit more sugar. If it’s too dry, add in a little extra milk. Pour glaze over completely cooled cake. Dust cake with powdered sugar (optional.)
