Everything that makes s’mores so delicious is packed into this cookie: marshmallows, chocolate and graham cracker crumbs. These are especially good with a cup of hot chocolate! Bonus: these cookies freeze extremely well.
Ingredients:
- 1 cup butter, softened
- 1 1/2 cups brown sugar
- 2 eggs, at room temperature
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 1/2 cups graham cracker crumbs
- 2 tsp corn starch
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1 1/2 cups dehydrated mini marshmallows
- 1 cup chocolate chips
- 1 milk chocolate bar, chopped (100 grams)
Method:
- Preheat oven to 350F and line a baking sheet with parchment paper or a silicone baking mat.
- In a bowl, stir together the flour, graham cracker crumbs, corn starch, baking powder, baking soda and salt. Set aside.
- Using an electric mixer fitted with the paddle attachment or a handheld mixer, cream the butter and brown sugar until light and fluffy.
- Add the eggs and vanilla and mix until combined.
- Reduce mixer speed to low and slowly add in the dry ingredients.
- Next, add in the marshmallows, chocolate chips and chopped chocolate bar.
- Use an ice cream scoop to form dough into balls and place on prepared baking sheets.
- Bake for 10-12 minutes.
- Cool cookies on a wire rack.
