S’Mores Cookies

Everything that makes s’mores so delicious is packed into this cookie: marshmallows, chocolate and graham cracker crumbs. These are especially good with a cup of hot chocolate! Bonus: these cookies freeze extremely well.


  • 1 cup butter, softened
  • 1 1/2 cups brown sugar
  • 2 eggs, at room temperature
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups graham cracker crumbs
  • 2 tsp corn starch
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 1 1/2 cups dehydrated mini marshmallows
  • 1 cup chocolate chips
  • 1 milk chocolate bar, chopped (100 grams)


  1. Preheat oven to 350F and line a baking sheet with parchment paper or a silicone baking mat.
  2. In a bowl, stir together the flour, graham cracker crumbs, corn starch, baking powder, baking soda and salt. Set aside.
  3. Using an electric mixer fitted with the paddle attachment or a handheld mixer, cream the butter and brown sugar until light and fluffy.
  4. Add the eggs and vanilla and mix until combined.
  5. Reduce mixer speed to low and slowly add in the dry ingredients.
  6. Next, add in the marshmallows, chocolate chips and chopped chocolate bar.
  7. Use an ice cream scoop to form dough into balls and place on prepared baking sheets.
  8. Bake for 10-12 minutes.
  9. Cool cookies on a wire rack.

*Yield: Approximately 30 cookies
